A Study on the Oxalates in the Sesame Oil

Abstract
Although oxalic acid in the sesame oil is reportedly known toxic to the human, it has been a general household preparative procedure in Korea to extract the oilfrom the seed as a whole.
The present work was undertaken in order to clarify the tissue localization of the oxalates in the sesame, which should be excluded prior to extraction, by means of thin-layer chromatographic and chemical analyses.
The followings are the conclusion;
1) The presence of oxalates were confirmed qualitatively with the crusted sesame and were shown quantitatively amounting as much as 93 ppm.
2) With decrusted sesame, there was observed no evidence of oxalates both qualitatively and quantitatively.
